Got a busy weekend ahead so preparing a nutritious & delicious breakfast overnight...which will take me all of 3 mins 😂...Overnight Chia Oats topped with Berries & a drizzle of Honey . . Ingredients: * 2 cups of rolled oats * 2 tbsp of chia * 3 cups of whole milk * 1 tsp of manuka honey * Handful of blueberries * A couple of raspberries . . These cheesy beetroot balls are staple in our freezer stocks as they usually go down well with Joshua, and they’re a great way to combine veg, protein and carbs in the same piece of food. Win win win!! So while I’ve posted this recipe before, I thought I’d share it again. . Feel free to swap the vegetables you use - just be mindful of the different moisture contents and the effects that may have on texture and cooking time. (I also forgot to add an egg the last time I made these and they turned out fine). Cooking (unlike baking), is rarely an exact science, so have fun and play about with your ingredients. . - Grate the beetroot, carrot and courgette. Use the grater attachment in a food processor rather than hand grating if possible to save time and reduce the risk of spraying beetroot juice everywhere
- Mix all ingredients together in a bowl
- Shape into balls and place on an oiled tray (wet hands will help)
- Spray the balls with a little more oil, or carefully roll them in the oil on the tray
- Bake at 180’C for 15-20 mins, carefully turning them over halfway

Eat fresh, refrigerate or freeze

Anyone else get to bare cupboards and then its like, thats it we have to shop 😂 i let kaia have some golden syrup on hers but let her do the pouring (not the best idea) she also had a bowl of porridge before this. 🥬GREENS GREENS GREENS 🥬 By 6 months the iron stores babies are born with start to deplete so get this SAVED and get boosting them right back up again! 💥 WEANING: Once you have had a good go at the root veggies you can make your way to the green veggies, a bit more bitter but great to get them well established on ALL veggies from the word go! This is my baby equivalent of a power smoothie-packed full of iron and greens goodness (in fact if you check my stories it’s also what’s all over Poppy’s face 😂) Makes approx. 11 cubes 250ml veg stock (using half a baby stock cube) 1 head broccoli, separated into florets and stalks chopped into 2cm cubes 150g peas 1 courgette, chopped into 2cm cubes 100g bag of washed spinach 1. Put the stock into a large pan and add the broccoli, the peas and courgette. Put a lid on and cook until the stems of the broccoli are tender. 2. Meanwhile, pierce the bag of spinach and place in the microwave and cook for 2 mins on full power. 3. Add the cooked spinach to the pan and allow to cool. Does your child have a favourite cuisine? Mexican is definitely a huge fave for Zayne, but nothing can beat Italian food - he’s loves it, and has a second helping every time! I’m even considering taking him to a cute little  Italian spot for his 2nd birthday 😁

Zayne ate fairly well today, but he did leave his orange,  lettuce and cucumber untouched. I couldn’t get an after pic because he threw an almighty tantrum at the end of his meal - all because he wanted some of his dad’s beer, and obviously wasn’t allowed. Fun times! 😅

Cubanelle peppers are dark green when ripe and if left to ripen longer they turn red. Great for salads and garnish but also very tasty in this stuffed pepper curry. Supper easy not much prep required either. Simply wash, slit down the middle, stuff with the paste and cook. Recipe Serves 6 7/8 dark green cubanelle (long shaped)peppers 2/3 cup of gram flour 1/3 cup of gluten free flour (or millet flour) 3 tbsp of sabji masala (*can make your own) Water to make paste 2 tbsp of oil 4 curry leaves 2 tsp of cumin 1 tsp of asofodeta 2 tsp of black mustard seeds Method 1️⃣Wash peppers and slit down the side. From time to time change the water on top with cold water. We had planned to visit Joshua’s friend this afternoon and eat dinner at their house but she was will so we had a quiet afternoon at home instead and Joshua helped to cook his dinner of pasta and sauce. We went out to local farm and soft play this morning so I made some lunch to take with us - quesadilla with humous, grated carrot, grated cheese and sliced tomato along with a pot of blueberries. We bought some chips at the cafe to have them with, along with cappuccinos for the adults and a babycinno for Joshua. We went out to local farm and soft play this morning so I made some lunch to take with us - quesadilla with humous, grated carrot, grated cheese and sliced tomato along with a pot of blueberries. We bought some chips at the cafe to have them with, along with cappuccinos for the adults and a babycinno for Joshua.

Lunch and the ‘cinnos all went down well, (once we’d persuaded Joshua to take a break from the soft play) though he did insist on ketchup to dip the chips and quesadilla in.

I made Joshua egg and banana pancakes for breakfast, served with kiwi. These are a perfect first food and are something I’ve made him since we started weaning at 6 months. Simply mash a banana and mix well with a beaten egg. Add some desiccated coconut and ground almonds (this is optional, alternatively you could add some flour to thicken up the mix a bit). Heat a couple of spoons of oil in a frying pan (I used coconut) and drop spoonfuls of the mix in - like drop scones or scotch pancakes. Cook on a medium heat for a minute or so until the base is golden and firm. We got takeaway curry last night so we saved some of the rice and a vegetable curry for Joshua. We mixed it all up together and added some yoghurt to cool down the spicyness a bit and served it with carrot and green beans. I wasn’t sure if he’d like the curry as he’s been hit and miss with rice and with curry before but he loved it and ate seconds too. He didn’t touch the carrot or beans and I hadn’t expected him to - they were there for exposure really. I picked up a reduced bag of steamed beetroot at the supermarket yesterday so I made some beetroot balls (recipe previously posted, but can post it again if anyone is interested?) I served a few up for Joshua’s lunch along with mashed potato and beans. Breakfast was scrambled egg (obvs) and half a toasted bagel thin spread with marmite and cream cheese. A bit late to post this , because mom’s back at work and she usually helps prepare Rashid’s food. So today Mama had to do all the work herself ! 😩 The little one loves this and its what he usually has for lunch. Healthy and delicious. (Yup Ive had a spoon or two 🙈) Its nothing special and we simply call it our Rashid’s veggie rice. You don’t have to necessarily use the veggies whats mentioned here and can throw into the pot whatever you’ve got in your fridge. . . RECIPE : VEGGIE RICE . 🍠 1 Tablespoon Brown rice 🍠 1 tablespoon Moong Dal 🍠 veggies of your preference ( we used sweet potato, carrot and marrow ) 🍠 A little bit of onion or leeks 🍠 1 garlic pod 🍠 coriander leaves 🍠 A pinch of salt , pepper and jeera powder ( adding spices if totally upto you) Wash and cook them together in a pressure cooker or steamer. Cook until soft. I saw this kale pizza base in Sainsbury’s earlier and thought I’d use it to make a veggie-packed pizza for Joshua’s dinner. To make the sauce I blitzed up some chopped tomatoes, grated carrot, grated courgette, grated steamed beetroot, spinach, oregano and tomato purée. Then I grated some cheddar cheese and mozzarella. Joshua helped to spread the sauce on the base (I guided his hand while doing it - I didn’t fancy the bright purple beetroot sauce getting anywhere) and he also helped sprinkle the cheese on. Once cooked I served it up with corn on the cob. He ate loads and had seconds but luckily there was lots left over to go in the freezer for another day. There was also lots of sauce left over which I’ll freeze in portions for pizza or pasta too. . (I hate these dark afternoons - they make good photos look awful!! They are also the BEST form of keeping your baby entertained. Homemade roasted tomato basil soup with garlic, olive oil and caramelized onions 🥣 . For the roasted tomatoes 🍅 3 pounds roma or plum tomatoes, cut in half 🍅 8 cloves garlic, peeled 🍅 3 tablespoons olive oil 🍅 Freshly ground salt and pepper (I didn’t add salt so baby could have some) . For the caramelized onions: 🍅 ½ tablespoon olive oil 🍅 2 yellow onions, thinly sliced . Additions to the soup: 🌿 ½ cup packed basil leaves 🌿 ½ teaspoon dried oregano 🌿 1-2 cups water or vegetarian broth, depending on how thick you want the soup . Method: 1. Preheat oven to 200 degrees. Place baking paper onto oven tray. Place halved tomatoes and garlic cloves on the baking paper and drizzle with 3 tablespoons of olive oil. Generously season with salt and pepper. Roast in the oven for 40-45 minutes. 2. While the tomatoes are roasting, you can make the caramelized onions: Add 1/2 tablespoon olive oil to a large pot and place over medium heat. Add the onion slices and stir to coat the onions with olive oil. Cook, stirring occasionally. Check onions every 5-10 minutes until they have completely caramelized and turned golden in color. This ususally takes 20 minutes. 3. Once tomatoes and garlic are done roasting, allow them to cool for 10 minutes, then add them to a food processor and blend until smooth. Homemade roasted tomato basil soup with garlic, olive oil and caramelized onions 🥣 .

For the roasted tomatoes
🍅 3 pounds roma or plum tomatoes, cut in half
🍅 8 cloves garlic, peeled
🍅 3 tablespoons olive oil
🍅 Freshly ground salt and pepper (I didn’t add salt so baby could have some) .
 For the caramelized onions:
🍅 ½ tablespoon olive oil
🍅 2 yellow onions, thinly sliced

Additions to the soup:
🌿 ½ cup packed basil leaves
🌿 ½ teaspoon dried oregano
🌿 1-2 cups water or vegetarian broth, depending on how thick you want the soup
.
Method:
1. Preheat oven to 200 degrees. Place baking paper onto oven tray. Place halved tomatoes and garlic cloves on the baking paper and drizzle with 3 tablespoons of olive oil. Generously season with salt and pepper. Roast in the oven for 40-45 minutes.
2. While the tomatoes are roasting, you can make the caramelized onions: Add 1/2 tablespoon olive oil to a large pot and place over medium heat. Add the onion slices and stir to coat the onions with olive oil. Cook, stirring occasionally. Check onions every 5-10 minutes until they have completely caramelized and turned golden in color. This ususally takes 20 minutes.
3. Once tomatoes and garlic are done roasting, allow them to cool for 10 minutes, then add them to a food processor and blend until smooth. Next add basil and caramelized onions and blend again. I served them with a tomato bistro salad, and plain rice cakes topped with cream cheese and cucumber 🥒 Ingredients: 🌿 Low calorie cooking spray 🌿 200g asparagus tips, cut into small pieces 🌿 1 red pepper, finely chopped 🌿 6 large eggs 🌿 2 garlic cloves, crushed 🌿 Small handful of finely chopped fresh tarragon 🌿 Salt and freshly ground black pepper ( I didn’t add salt so baby could have some) 🌿 Cheese, small cubes (4 cubes per muffin) . Method 1. Preheat the oven to 180°C/160°C Fan/Gas 4. 2. Lightly spray a non-stick six-hole silicone muffin tray with low calorie cooking spray. Joshua’s best friend Alice came round this afternoon so I cooked dinner for both of them - sautéed potatoes (recipe recently posted), vegetable fritters, peas, sweetcorn, broccoli and tomatoes. They both had plain Greek yoghurt for dessert. It was so funny seeing them eating and playing off each other - banging their forks and spoons on the table and blowing raspberries at each other. Plus Alice didn’t finish her potatoes so Joshua was able to polish them off. Miracle teethipegs meds’ 👍🏼👍🏼👍🏼 We have had some crazy issues with teething on and off since beginning of December ...today I tried #anbesolliquid after trying EVERYTHING else (bonjela, dentinox, Calpol, nurofen, Ashton’s & Parsons) and after refusing breakfast yet again 🤷🏼‍♀️ - she was suddenly very happy to stuff her little face, after just thinking oh I’ll give this stuff a go....wow, it’s amazing 😉 . This piccie is dinner, but when she was shovelling food in her mouth, it was a late lunch - 3.45pm, so not sure what she is going to eat of this, as I didn’t expect that to happen. This Anbesol really works. **🥳🥳🥳🥳🥳 Earlier late lunch was whatever I could get out of the fridge fast enough.....I’ll post the hilarious piccie of Chops confirming that it is Business As Usual (BAU - if you like me work in corporate and are used to three letter acronyms ! 🤪) **🥳🥳🥳🥳🥳 Today though we have defrosted swede from Christmas Day leftovers topped with cheese. I made a giant roasted veg tray on Saturday for my sis, hubs and I for lunch so the veg is taken out of the fridge from a tuberware, then zapped in the microwave. Method:
1. Slice the new potatoes, put into a bowl, and toss in olive oil evenly.
2. Add the spices and toss again
3. Put baking paper onto the baking tray, and lay out the potato 
4. Put in the oven for 25-30 mins on 180 degrees turning half way through.

We did our weekly food shop this morning and Daddy picked up a chicken and king prawn paella with chorizo, peas and red pepper for his lunch and gave some to Joshua too. He loved it and ate it all! Our trips to the supermarket have certainly changed over the last two years. - Initially Joshua was happy to sit in the trolly. - Then he gradually needed more and more entertaining throughout the visit so we had to rely on time-consuming snacks like boxes of raisins, rice cakes and reusable pouches of homemade smoothie. - More recently, however, snacks haven’t even kept him occupied for the first aisle and he has started screaming to be let out straight away. Today, after a few horrible trips where he screamed most of the way round, we gave in and let him walk the whole time, and he loved it! Don’t get me wrong - it takes twice as long with him toddling around with us, and one of us always has to be on ‘Joshua watch’ to follow him when he wanders off or decides to pick glass jars off the shelves 😱, but it’s actually really nice to involve him more in the shopping by getting him to pick the fruit, veg and products from the shelves and put them into the trolly. Carrot and Parsnip mash first weaning meal. When starting to wean my little one I was clueless as to what sort of foods a baby should and shouldn’t have! All I knew was that I was keen to home cook his meals and incorporate breast milk into the recipes. (can be substituted with formula or made without either, however cows milk should not be used until the child is over 1.) So with a little research I’ve made this easy carrot and parsnip mash. It is quick and makes enough to freeze. Carrots are a great source of vitamin K, which enables blood clot properly, vitamin B6, which are good for skin, hair, eye, and liver health. They are also full of fibre which is essential for digestion if baby is having cereals which can cause constipation. The parsnips contain calcium and vit c, for bone development and also small amounts of protein which helps muscle and blood systems. So it’s a great first meal for developing little ones. Ingredients 2 medium carrots 2 medium parsnips. (Makes enough for 3 meals when mixed with milk.) Method Peel and chop the carrots and parsnips as pictured and boil for approx 10 minutes or until the parsnips can easily be pierced with a knife. Next mash together with either a food processor for younger babies or a handheld masher to add texture. When cooled add 20mls of breast milk (if using) or when divided into portions add a small amount of infant formula. This is not a necessary addition and formula should always be added premixed and stored no longer than the manufacturers guidelines. We were out visiting friends all afternoon and got back quite late so a quick dinner was called for. . Joshua goes a bit manic when I’m in the kitchen - he demands to be held the whole time and screams if I don’t pick him up or try to put him down, which makes cooking impossible. So I popped him in the high chair with Biggleton playing on my phone (the only way to keep him entertained at the moment) and this meal was on the table by the time it had finished 11 minutes later.... fish fingers, crispy sautéed potatoes, peas and sweetcorn. . Most excitingly though... he ate it all!! Joshua has been really picky recently and has generally refused whole sections of most meals for weeks, even at nursery! So I was so pleased when he ate it all and even had seconds of the fish fingers and potatoes. Joshua’s lunch was a falafel and humous wrap, served with a deconstructed humous and falafel wrap, with a little cheese on the side. As expected he ate the humous, tortilla and the cheese on its own but didn’t eat the filled wrap. Dry Jerk Chicken . This is one our favourite recipes to make, you can knock it up in 10 minutes and it’s so flavoursome 😋 You could also serve it with rice and corn for a more filling dish 🍚 🌽 . Ingredients: 🌿 1 tsp all-purpose seasoning. 🌿 1 tsp ground allspice. 🌿 1 tsp mixed dried savory, marjoram, oregano, thyme, rosemary, basil and tarragon 🌿 1 tsp salt (optional - I decided not to add salt so baby could have some too). 🌿 1 tsp ground black pepper. Method: 1. Put the all-purpose seasoning, ground allspice, mixed herbs, salt and pepper in a bowl and mix together. 2. Add to the chicken, coat evenly, pan fry on a low-medium heat until chicken is cooked . Ingredients:
🌿 1 tsp all-purpose seasoning.
🌿 1 tsp ground allspice.

INGREDIENTS: ▫️1 eggplant ▫️1 zucchini ▫️1 potato ▫️1 teaspoon tahini ▫️Dash black pepper for taste (optional) ▫️Dash of salt for taste (optional) ▫️Water or Mommy’s milk to thin consistency . INSTRUCTIONS: 1. Wash and cut your potato into small chunks. 2. Drizzle a little oil of choice, and bake at 450F/230C for 30 minutes, or until you can pierce it with a fork. 3. Wash and slice eggplant and zucchini into small slices. 4. Bake at 350F/175C for 30 minutes. 5. Combine eggplant, zucchini, potato and tahini in the blender, adding a little water or Mommy’s milk to thin the consistency. 6. Blend until smooth. 7. Add a pinch of salt and/or black pepper to desired taste, and blend again (optional). 8. Serve with rice or quinoa. 9. Pour the remaining portions into your Kiddo Feedo Freezer Tray, secure lid and freeze until solid. 10. Defrost portions as needed. . **To save time, you can cook all three ingredients at 350F/175C, and then remove the eggplant and zucchini once they are cooked. I would then increase the temperature for the potatoes to continue cooking until completed. 🍆🥔 . Always consult your pediatrician before introducing solid food to your baby. 👶 .
